Instructions

  1. Make the marinade by mixing the cumin, coriander, garlic, lime juice and half of the olive oil in a small jar with a screw top lid. Shake well.
  2. Place the steak in a shallow baking dish and pour the marinade over the steak, turning to make sure the steak is well covered. Leave the steak to marinate for 20 minutes.
  3. Meanwhile, make the guacamole. Mash together the avocado, red onion, red chilli flakes and lemon juice. Season with salt and pepper and set aside.
  4. In a small bowl, mix together the tomato halves with the remaining olive oil and basil leaves. Heat a grill pan over high heat. Add tomatoes and cook until blistered, which should take approximately 3 minutes. Once blistered, remove from pan and add the steak.
  5. Grill the steak for approximately 4 minutes per side for a medium finish. Slice up the steak, top with the blistered tomatoes and serve with the guacamole. Enjoy!
